Honestly I read up to the introduction of the skeleton guy when I was in grade 6 or 7 and then the library ran out of them so I don't really remember a lot about the "newer" people.
Like, chopper ate the human-human fruit and then was a lot cuter? And was a doctor?
Like, Skeleton? Pantie raid?
Mechanic? Does poses? Has a star? And a gang?

Here are the results of my research:
Chopper - Reindeer, doctor, transforms, X on hat
Nico Robin - Speculates about people dying horribly, creates copies of her body parts (esp. arms)
Franky - Cyborg, builds ships, refers to the current week, weeps, "SUPER!"
Brook - Skeleton, musician, skull jokes
Thousand Sunny - Is a ship
