There is definitely a ritual aspect to locking the door behind you, turning on the grill, pulling frozen pitas, counting the till, putting out the mats and outdoor furniture, assembling the soda machine and sandwich base, and unlocking the restaurant for business by 10:30 AM every day of the week with varying levels of success depending on who's on shift.
